DT Coffee - Honduras - BEDIM Day 7

I've been really loving Honduras coffees at the moment, so when Jim from DT Coffee got in touch and asked if he could send me some coffee, I said heck yes, and I was delighted that there was a bag of Honduras in the box he sent.

We've never actually reviewed DT Coffee here on The Coffee Life, so where else to start than with a coffee region I'm super enjoying right now.

So who are DT Coffee

DT Coffee was set up by Dhan and Don, both of them having a combined 20 years in the coffee industry, with numerous championship titles between them and a huge passion for sharing their wealth of knowledge about coffee.
As well as coffee, they also have some great Barista courses on their site, where they are able to offer a unique training experience to their students.

The Beans

Honduras Fairtrade and Organic
Process: Washed
Variety: Lempira, Catuai
Taste Notes: Juicy, Honey, Citrus and Floral Aromas

The Brew

V60
17g of Coffee
275g of Water
30 Second Bloom with 32g of Water
Slight Agitation
3 Minute 15 Second Total Brew Time

Taste - To start with this coffee had some super sweet syrup aromas. It was subtly citrus-y with some floral acidity in there.
As it cooled, it had some lighter fruity notes, sweet fruits, like berries more than a harsher stone fruit.
The floral acidity was welcomed throughout the cup, and it's one thing I'm really liking about some Honduras coffees, they're so fruity, with some really nice acidity.
All in all, this was a really nice brew, and one that I'm sure I'll enjoy the whole bag of.
