Two Chimps Coffee - Have Faith in the Fairies

Well, after a couple of stressful weeks of not having a laptop that worked properly, we are back!


This blog post is a little late, (much like the rest of the backlog of coffees I now have to catch up on!)  however this is the last coffee I received from Two Chimps Coffee.

Two Chimps are on a mission to fill the gap between pod machine coffee drinkers and speciality coffee drinkers by offering fresh, hand roasted, speciality coffee straight to your door. 
Two Chimps focus on hand roasted, ethically sourced, single origin coffees direct from their roastery in Rutland. Their coffees come from small farms and cooperatives from around the globe. This makes their coffee extra special because when a coffee runs out, it's gone for good. 
They pay between 30-150% more than the "going rate" for green coffee to make sure that farmers that lovingly grow and harvest such superior coffee are paid correctly for their work and effort. 




The Coffee

Have faith in the Fairies - Brazil 


Fazenda Zaroca has been in the Basilios family for over 100 years.
After a decline; in 2015 Gilberto and his brother set to turn the farm around. To start, they replanted areas with varietals such as Mundo Novo and Catuai. They now have over 16 different varietals across the site. To focus on speciality coffee, recently Gilberto has introduced static drying boxes too.
The coffees are picked and separated before drying for a day on patios. The coffees are then transferred into these aforementioned drying boxes. The boxes are a metre deep with the capacity for 15000 litres of coffee cherries. A vented grill at the bottom allows for the air to be circulated from below. They stay in these boxes for ten days before going to the local mill. This method of drying coffee helps develop the flavour profiles of the cherry.
Fazenda Zaroca and its workers have seen a massive improvement in their speciality coffees and have found themselves in the cup of excellence competition multiple times now too.
This coffee is an excellent example of their hard work.

Altitude - 1150MASL
Varietal - Topazio
Taste - Smooth and Creamy, like milk chocolate. Find toffee sweetness and soft cherry acidity in every cup. And vanilla as it cools



Lets Brew

Brewer - V60

Recipe - 15g of Coffee
250g of Water
30 Second Bloom with 30ml of Water
Agitation
Total Brew Time - 2 minute 45



This brew had really subtle chocolate notes when first sipped, with a slight raisin tone. As it started to cool down more, it became a sweet syrup-y brew with some stone fruit hints of acidity. The more it cooled the more chocolate-y the brew became. 
I am in love with the name of this coffee, I love anything fairies and magic so it was a winner from the get go.

Taking Care Of Your Mental Health Post Lockdown

 I wrote a post during May about Taking Care Of Your Mental Health During Lockdown, and the response to it was INCREDIBLE.

I don't think I've ever had so much interaction on one singular blog post before. 


But as lockdowns have eased, and people are getting back to their daily lives, I thought I'd do a little update post about taking care of your mental health, post lockdown. 

The world we live in right now is a weird one, with new norms of wearing face masks everywhere, carrying huge amounts of hand sanitiser everywhere, and generally being more cautious of everyday life, still while battling the daily struggles of the dreaded 'rona.




Like my last post, routines are a big thing. Getting back into general routines of life, with the added extra cautionary measures were all having to take. So here's some tips about taking care of your mental health post lockdown. 

(Please note, I am not claiming to be an expert in Mental Health, I am just someone who has struggled with mental health issues both in the past and currently)


Keeping up Routines

In my previous post, I raved about the importance of having routines.

Personally when I have day to day routines I feel a lot more balanced in my moods, I also feel like having a morning routine sets me up for a good day, and having a night routine gives me a better nights sleep.


Morning Routine 

My favourite thing recently has been waking up and immediately brewing a good cup of coffee (who's shocked) - throughout lockdown, I really lost my love for coffee, which was devastating. However, I've been making more of an effort to get up 10 minutes earlier to properly brew a good cup of coffee, and sit down and properly enjoy it. Getting my tastes for coffee back slowly. 

Try and find something that makes you want to jump out of bed each morning, it could be having a dance party (boy, sometimes it's needed), it could be something as simple as a skincare routine that you know will wake you up immediately. 


Evening Routine

Settling down with a good book and a cup of tea (usually earl grey!) is one of the best ways for me to calm down after a long day. I've really re-found my love for reading this year, and have read some incredible books (I even wrote a blog post about it - read that here). I try to stay off my phone as much as possible, otherwise I will be stuck in a Tik-Tok loop for hours on end (throwback to me spending 6 hours on it the first day I downloaded it, shameful)

Find something that calms you down at the end of the day, create a routine that makes you excited to do, knowing you'll get an amazing sleep after. 


Self Care

I'm a big advocate for self care.

Self care is an incredible thing that is 100% needed, and 100% underrated. 

Whether it's taking a walk, phoning a friend, having a little self pamper or even going out and treating yourself - self care looks different to everyone. No two people see self care in the same light, everyone is unique in what they feel self care looks like to them.

Spend some time getting to know yourself, getting to know what self care looks like to you. 



Cooking

Throughout lockdown I found my love for cooking again, cooking up some absolute bangers.

Banana Loaf and Bread making was all the rage throughout lockdown, but for some just making a healthy home cooked meal can be incredible calming and soothing - with takeaways not being as accessible as they were beforehand, and drive-throughs closed (or immensely busy now they've reopened) cooking was something that pretty much every household had to do.

Post lockdown, now that things have started reopening, I've still been making the effort to cook after a long day at work, rather than just opening the JustEat app and ordering a takeaway. 


Still taking advantage of the outside

Back in Lockdown we were allowed 1 walk a day, and as someone who loves the outdoors, I took advantage of that when I could. 

Now that lockdowns have eased, I'm still outside whenever I can be - taking walks, having coffee outside, reading outside. It's that little boost of serotonin that we all need. 


 Realising that doing nothing is OK

Now that we're starting to get used to the new norm of life, it's hard to even go onto social media without being bombarded with amazing things that people are doing. You end up comparing yourself to others, and how little you seem to be doing in comparison to them

But it's ok to not do anything. It's ok to catch up on sleep on your days off (I mean who wakes up at 5am on the days they're not working?!) It's ok if the only thing you achieved in the day is getting out of bed and making a cup of tea (or coffee in my case) 

It's unrealistic to expect to have motivation every minute of everyday to get up and do stuff - just don't be so hard on yourself.


 

Don't check the news every minute of everyday

I was that person looking at the updates of Coronavirus and all the other awful things going on in the world every minute of the day - and one day it clicked, it isn't necessary to do that. 

Keeping updated with the latest information is important, yes. But I know only check once maybe twice a day. Because in short, it's anxiety inducing - I found myself not wanting to do anything, not wanting to go outside, not wanting to talk to people because I was horrified of how awful the world is in 2020. However since I've reduced the amount that I look at the news, I find myself not obsessing over things that are very much out of my control.



Down Time Watching/Reading/Listening

I'm a sucker for some good down time, and with the amount of options that are now out in the world to watch/read/listen, it would be rude not to take advantage of these.

Keeping in Touch

I will be the first to admit that I am the worst at keeping in touch with people if I'm having a bad day - but we all know that reaching out to loved ones and friends will always make you feel better, even if it's just a quick text or phone call

Make sure you're keeping in touch with people, check in on your friends and family. They need you as much as you need them. 



Check in with yourself

Another amazing thing you can do to help your mental health is taking the time to check in with yourself, how you are feeling, what worries or concerns you have and what you can do to combat that - where is your anxiety, where do you feel it in your body and what can you do to make yourself feel better?

We all know to check in on friends and family, but how many of us check in with ourselves?

Dog and Hat Coffee Subscription Box 4

As I'm desperately trying to catch up on all the delicious coffees I've drunk over the past few months, it's time again for another Dog and Hat Subscription Box post!

Starting with Monsoon Estates

Anne and Chris developed their love of good coffee whilst living in Europe and later Australia. They started roasting beans to sell at a friend's charity sale and they were so well received that they decided to make it a business. Then, after a period of fast growth, multiple awards, and trips to the US to attend coffee boot camps, it was time to scale up.
September 2012 saw the start of new things for them in the form of a new roastery. They leased a barn conversion on the Alscot Estate about 3 miles from Stratford Upon Avon. 
In late 2013 they took delivery of a brand new Probat coffee roaster which was soon installed in the roastery to keep up with the high demand of coffee orders.

Taste Notes - Chocolate and Nut, Sweet and Aromatic with Citrus Acidity 

*Maragogype elephant beans are a mutation of Arabica Typica first discovered near the town of Maragogype in Brazil. These trees yield smaller amounts of these massive coffee beans which makes them quite rare and expensive. These days Maragogype beans are grown in several Central/South American countries but are still quite hard to come by.

(50g Bloom to 30 Seconds)
2 Minute 45 Second Total Brew Time





This was a really interesting cup, I got some really unique flavours out of the brew - mulled wine acidity being one, and spiced with chocolate undertones being another.
It was a super intriguing and delicious coffee to try. It was well rounded, with the perfect subtle acidity

Ineffable Coffee Roasters





Ineffable Coffee Roasters is a project that seeks to contribute to the community and help improve the appreciation of coffee in Andalusia and Spain more widely. For more than ten years the team has lived abroad in different countries and cities such as Cape Town, Istanbul or the UK, where speciality coffee culture is widespread. 
The team have had long careers with experience working as baristas, roasters and trainers in established businesses. Now they've returned home with the desire to continue contributing and growing. They are Omar, Jose and Alejandro - each brings a different experience of coffee and have now joined forces to offer the best as a team. 
The name Ineffable Coffee Roasters is inspired by a feeling, causing much emotion, especially pleasure that goes beyond words. It is something unique that breaks the norm. 


(I know this is an aeropress and I'm talking about a V60 brew, but sue me, I forgot to take a V60 picture)

Altitude - 1750MASL 
Taste Notes - Notes of Orange, Brown Sugar and Floral 





Dark and fruity, with subtle citrus acidity, this coffee was super yum - full bodied, with light brown sugar undertones, it was a delicious coffee. Through an aeropress it was also super full bodied and delicious. This bag really didn't last me very long, a good week at most.

One Click Coffee Box 6

Guess who's back with a super late One Click Coffee Box blog post. 


Yet again, we had two gorgeous coffees from this box. One Click never seems to disappoint and after 6 months of One Click I am LOVING it.

Round Hill Roastery

In 2012 Eddie Twitchett the founder of Round Hill Roastery was rather enthusiastic home brewer, dreaming of one day roasting coffee. While working in hospitality in Bath, every break would be spent sampling coffee in one of the many great shops in the city. During this time the dream started to become reality. Starting out in a small industrial building no bigger than a garage Eddie was roasting and selling for the Bath farmers market every week.
Quickly the business grey and Round Hill gained it's first wholesale partners. Round Hill is now a small team and we have moved to a larger roastery but we keep that individual and personal feeling. We are working more closely with the farmers we have built relationships with over the years, taking time to make visits to the farms to further our education and to also source new coffees.
At Round Hill we respect our coffee's journey from farm to cup. Our coffee arrives as green beans - the farmer's finished product - and we careful to preserve and compliment the hard work already put into each bean.
Our aim is to source the best seasonal harvests, only selecting small lots from independent growers. We roast to highlight the dynamic flavours naturally found within our coffees.
We test-roast each coffee and allow it to rest. It is then brewed in a variety of ways to ensure maximum flavour and quality. Origin, variety and process are all key factors in determining each coffee's individual roast profile - with taste the central focus of everything we do. We focus on each coffee's unique character and roast them to highlight its dynamic flavours and sweetness. 
Pink Bags are roasted for espresso brewing. 
Blue Bags are roasted for filter brewing.

Taste Notes - Lemon, Stone Fruit, Tropical and Black Tea

This coffee gave off some insane crisp apple acidity vibes, it was super delicious, super smooth, with a definite stone fruit taste as it cooled. 
Every which way I brewed it, it was insanely incredible to taste - V60, Aeropress and French Press, they all didn't disappoint.

Craft House Coffee 

It all began with an obsession to make the perfect brew. After many years and many more cups of coffee the obsession went far beyond the brewing method. We wanted to know: where did this coffee come from? What happens during the roasting process? What gives the coffee its characteristics? Its important to think, not just how, but what actually makes the perfect coffee. What combination of elements, hard work and time has given you this product? This obsession is what set us on the mission to better understand the coffee industry. Thus Craft House Coffee was born.
Roasting is one of the most important aspects of making amazing coffee. Once the beans leave the hands of the farmers and make the long journey to the UK, it must be delicately and precisely roasted to perfection. Gone are the days of over roasting and inconsistent batches. Although each and every coffee batch is tested with microscopic precision, you can rest assured that using the power of technology the level on quality and consistency stays the same. 
Our roasting style is light yet well developed. Under roasted or underdeveloped coffee can taste grassy, weak and generally terrible. It damages grinder burrs and is very tough for you to properly extract. Our espresso roasted coffee's verge ever so gently into the medium range to help preserve the underlining characteristics of the origin but help it break through milk based drinks. We are always looking to explore the potential of our beans through profiling. It's all part of the fun!

There were some super prominent floral aromas coming from this coffee, and the taste, phoar, super curranty/raisin tastes with a little dark muscovado sugar peeking through. Delicious through V60, and slightly more full bodied through an Aeropress brew this was an amazing coffee.

The Return Of Untold Coffee Box

I am super excited to do this blog post, because .... GUESS WHATS BACK?


OH YEAH ITS THE UNTOLD COFFEE SUBSCRIPTION BOX, GET EXCITED!!!


For the first box, we had two tins of the gorgeous Brazilian from producer Danilo Barbosa






While we're on the subject of tins, Untold Coffee have changed their packaging, and for the better. It not only looks incredible but does it's bit for the planet too. 

Untold have also put an incredible (and inspirational) message on every tin

I'm so happy that Untold Boxes are back, and I'm excited to see what coffees they come out with in the future.

About this coffee - This coffee comes from Farkm Cachoeira, one of two farms owned by Danilo Barbosa. 
The D. Barbosa group are a family of coffee producers, consisting of fathers, mothers, sons and in-laws, all dedicated to cultivating coffee that is truly special, in order to honour their ancestors who began this culture in 1930.






Region - Minas Gerais, Brazil

Varietal - Yellow Catuai
Process - Fermented Natural
Cupping Score - 83
Flavour Notes - Dark Chocolate and Sweet Red Berries 


I did two brews with this coffee that really brought out the specific taste notes, both through v60

25 Second Bloom with 40ml Water

Super smooth and mellow with lots of aromatic chocolate notes, you get the more berry tones as it cools

2 Minute 45 Second Total Brew Time
20 Second Bloom with 40ml Water

This second brew definitely brought out the more delicate fruity tones, making it super smooth and mellow, with the subtle chocolate notes coming through at the end

25 Second Push 
2 Minute 10 Second Total Brew Time
25 Second Bloom 

I hadn't actually used my aeropress in well over a month, and I definitely forgot what an incredible cup it makes, using the aeropress brought out ALL of the chocolatey notes, made it a super bold and delicious cup. 


All in all, I can't wait to see what Untold Coffee has up their sleeves in regards to the upcoming subscription boxes - I for one, am super excited
