Two Chimps Coffee - Merry Chimpmas

 Now I know what you're thinking "Jass, it's January, Christmas is over" ... sure, sure, however there was one coffee that I didn't get time to blog about in December, but I wanted to showcase it on here, no matter how late it was, not only because it's a lovely brand who I worked with last year, but it's pretty damn tasty too. 


Two Chimps coffee were kind enough to send over a bag of their Christmas Coffee over to me in December, there have been a few posts including Two Chimps Coffee which you can read here

Two Chimps focus on hand roasted, ethically sourced, single origin coffees direct from their roastery in Rutland. Their coffees come from small farms and cooperatives from around the globe. This makes their coffee extra special because when a coffee runs out, it's gone for good.

The Coffee

This limited edition coffee is grown by the Kateshi and Isanya Estates in the Northern Province of Zambia. The conditions here are ideal for coffee production. Close to the equator and high in altitude, arabica coffee shrubs grow very happily in this hot summer climate.

Region: Zambia, Kateshi
10 Farm Co-operative
Process: Washed
Altitude: 1340-1400MASL
Certification: UTZ, RFA

Taste: Super tasty and full bodied. Sweet mentions of marzipan, cosy down with a Black Forest gateau acidity and rich chocolate!



Let's Brew!

Brewer: Clever Dripper 

Recipe: 15g / 225g

Ratio: 1:15

Method: Water in first, add coffee and stir, brew for 2 minutes 45 seconds and plunge on top of server.




This coffee came out super smooth and sweet, a huge pudding taste, and slightly almond-y much like marzipan. The acidity was welcomed by a delicious sweet cherry taste which lingered for a while after sipping. As it cooled, it almost became citrus-y, with a prominent orange taste which added to the Christmassy feel of this coffee. It was absolutely delicious, and I hope Two Chimps can get this back next year because I will definitely be getting some!

Well, after a couple of stressful weeks of not having a laptop that worked properly, we are back!


This blog post is a little late, (much like the rest of the backlog of coffees I now have to catch up on!)  however this is the last coffee I received from Two Chimps Coffee.

The Coffee

Have faith in the Fairies - Brazil 


Fazenda Zaroca has been in the Basilios family for over 100 years.
After a decline; in 2015 Gilberto and his brother set to turn the farm around. To start, they replanted areas with varietals such as Mundo Novo and Catuai. They now have over 16 different varietals across the site. To focus on speciality coffee, recently Gilberto has introduced static drying boxes too.
The coffees are picked and separated before drying for a day on patios. The coffees are then transferred into these aforementioned drying boxes. The boxes are a metre deep with the capacity for 15000 litres of coffee cherries. A vented grill at the bottom allows for the air to be circulated from below. They stay in these boxes for ten days before going to the local mill. This method of drying coffee helps develop the flavour profiles of the cherry.
Fazenda Zaroca and its workers have seen a massive improvement in their speciality coffees and have found themselves in the cup of excellence competition multiple times now too.
This coffee is an excellent example of their hard work.

Process - Natural
Altitude - 1150MASL
Varietal - Topazio
Taste - Smooth and Creamy, like milk chocolate. Find toffee sweetness and soft cherry acidity in every cup. And vanilla as it cools



Lets Brew

Brewer - V60

Recipe - 15g of Coffee
250g of Water
30 Second Bloom with 30ml of Water
Agitation
Total Brew Time - 2 minute 45



This brew had really subtle chocolate notes when first sipped, with a slight raisin tone. As it started to cool down more, it became a sweet syrup-y brew with some stone fruit hints of acidity. The more it cooled the more chocolate-y the brew became. 
I am in love with the name of this coffee, I love anything fairies and magic so it was a winner from the get go.

There's a Chimp in my Kitchen - Honduras

Produced solely at San Isidro III, Copan, this outstanding natural was produced during a year when rain and a lack of pickers made harvesting difficult. To process, this coffee was macerated in barrels before sun drying for 20 to 30 days, where it was turned hourly.

Honduras - Francis Arturo Romero - Single Farm
Process - Macerated Natural
Altitude - 1200MASL

A really interesting coffee. Find a thick, fudge-like body followed by an abundance of cherry and plum-like acidity. Yeah baby!




Lets Brew

Brewer: V60

Recipe
20g of Coffee
300g of Water
3 Minute Brew Time

Process: Bloom 30 seconds, 40g of water, agitate - further 3 pours to reach total brew weight with a total time of 3 minutes.



This coffee came out incredibly fruity, with some punchy stone fruit (more specifically plum and cherry) acidity - it felt super syrupy on the tongue, which was welcomed with more dark, ripe plum notes. 
I haven't had a coffee as fruity as this in a while, and some of my favourite notes to find in coffee are stone fruit, so this coffee was a definite treat for me.

The lovely Ellie at Two Chimps got in contact with me and asked if I would like to try their coffee, of course it was a no brainer after doing a little research of what amazing things they do and create.

The Coffee


OODLES OF ONGLES


A single origin coffee from the farm Ibisi in Rwanda. Grown at 1700 MASL, this washed coffee is juicy and bright with a toffee sweetness as it cools. 


More about the coffee - behind the scenes:
After the success of the Gitega Hills washing station, Bernard Uwitije has set up the Ibisi Mountain Hills washing station too. He loved the outcome of fully washed speciality coffee and wanted to do more; which is why he set up this second washing station - with the same high quality as that of Gitega Hills.
After the coffee cherries arrive, they are floated and separated before being pulped and fermented. When the mucilage is loose enough, it is washed off. The beans are then dried under shade netting for a couple of days and then moved onto raised beds to dry in the sunshine for a further 15-22 days. 
Located in Southern Rwanda close to the source of the river Nile, this fantastic coffee certainly lives up to Bernard's reputation.
This washed African coffee is a real treat.



For this coffee I brewed it in the classic V60 (and look at me investing in a server!!) 

The recipe

20g of Coffee
300ml of Water
30 second bloom and agitation, 45ml water
3 minute 25 second total brew time



(lets just pretend I didn't spill this everywhere, being your own photographer is hard)

This coffee came out tasting super bright and fruity with more of a particular grapefruit acidity. As it cooled, it became more syrupy sweet with the acidity becoming more subtle and punchy.
Overall this was a delicious brew, and I cant wait to finish this bag in a few days (it's been going down real fast!)
