Untold Coffee Box 6

That's right, it's that time of the month where we talk about the Untold Coffee Monthly Subscription, and after my last posts, I've had a few messages asking if I am sponsored, or sent these boxes every month to review on here. To clear up - The answer is no, I just love the idea of subscription boxes, and sharing them and what I think of them - and although I have got a few posts coming up with coffee's that I have been sent/given, I will always write if I have been gifted the coffee, but with the Untold Coffee box, I pay every month to have this delicious box delivered to my door. 


Now that long intro is done, we can get into the Coffee Box.


 Box number 6 contained 3 coffees:
2 x 200g bags from Untold Coffee Roasters
1 x 100g bag from River Coffee Roasters






As usual I used the same recipes for all 3 brews

23g of coffee
300g of water at 90 degrees
Ratio of 1:13
30 second bloom
Total brew time 3 minutes





The first coffee I tried was the River Coffee Ethiopian

Uraga Samii Washing Station
Guji Region Ethiopia
Varietal - Heirloom
Process - Washed
Flavours - Earl Grey, Peach, Red Grape





Aromas - Tea, bergamot tones,hints of fruit

Tastes - Grape acidity, hints of bergamot, and fruity flavour left on tongue
Tastes sort of like a light syrup-y tea, really delicious




The second coffee obviously from Untold was the Brazilian

Region - Illcnea, Sul De Minas, Brazil
Varietal - Yellow Catuai
Process - Natural
Flavours - Strawberries, Cream and Milk Chocolate

Tastes - Deep chocolate notes, smooth and sweet with no bitterness and very low acidity level.
More subtle berry hints as it cools down, very delicious smooth coffee




The last coffee from the box was the Untold Rwandan


Region - Cyarumbo Estate, Huye District, Rwanda
Varietal - Bourbon
Process - Washed
Flavours - Caramel, Lemongrass, Vanilla, Grapefruit Acidity





Aromas - Hints of black tea aromas

Tastes - Lots of fruity acidity, very citrus-y
Syrup like undertones and becomes more vanilla as cools, with no lingering acidity, another amazing coffee





I know this is slightly behind schedule seeing as I've got one more untold box post to come out before the next one arrives (I'm trying my hardest!!!) but none the less I hope this was an interesting read.

Ohio Coffee Swap - Mission Coffee Roasters

As well as taking part in Third Wave Wichteln (blog post coming soon) late last year, I did a few private swaps with some of the people from the Facebook group.
One particular swap I did was with a guy from Ohio, and I was super excited when those beans turned up on my door. 




I had been sent an 8oz (can't just weigh in grams, America??) bag of Mission Coffee Company from Colombus, Ohio.

Ipocoara, Brazil
Nilson Aguila
Varietal - Catuai 144
Process - Natural + Pulped Natural
Taste Notes - Cocoa, Graham Cracker, Cherry 


Now I'm not going to lie and tell you that I didn't have to Google what the hell a Graham Cracker was which apparently the UK equivalent is Digestives and Rich Tea biscuits combined .. Interesting



I've researched more into Mission Coffee Roasters, and it is definitely on my list of companies to order from again in the future.

I've brewed this coffee several times playing around with the recipe, and every single one comes out delicious, but I've finally found my favourite.


Brewed through a V60
24g of coffee
275ml of water
25 second bloom
2 minutes and 45 second full brew time



Every brew I made the result would be super chocolatey, the chocolate notes in this coffee is actually insane.


Through this specific brew -
Super dark intense cacao notes, with sour stone fruit undertones, very prominent fruity acidity, but so, so delicious.
I normally include the taste notes as it cools, but I'm not going to lie, it was always drunk before it even got the chance to cool down.

Girls Who Grind Coffee - Honduras Microlot

Well it's certainly been a hot minute since I've blogged about Girls Who Grind Coffee 
And I'm actually very late in blogging this beauty, as it's one of the ones I purchased in late 2018 - but better late than never right?

The Recipe I Used - 



I've also been playing around with an app called Coppee and I'm going to do a full blog posts on coffee apps soon.








I've been loving playing around with v60 recipes recently, and every recipe I've tried with the Honduras comes out pretty beautiful





(please ignore the fact I'm still wearing christmas pyjamas)


Super fruity, tangy and sour cherry notes, with aromatic floral notes.
Deep and dark fruity notes with next to no acidity, even when cooled.
A really bold coffee, super delicious, a really good pick-me-up.


2019 is going to be another awesome year for the girls, and I am so excited to watch them grow further into their amazing coffee journey, if somehow you've never checked them out you can find them linked below.

Untold Coffee Box 5

Welcome to the first post of 2019!!! 
Let's hope 2019 is filled with many a good Untold Coffee Box posts.




Coffee club box number 5 contained 3 delicious coffees all from Craft House Coffee
I’d never tried out Craft House before so was very excited to give them a try





I actually changed it up a little (if you're unfamiliar with my box posts, I usually brew them through an aeropress using the same recipe each time) but alas, I brewed these bad boys through V60 (a refound love)
So the recipe I used
23g of Coffee
300g Water
3 minutes, 15 seconds (30 second bloom)






First up was a lovely Colombian






Region - Villa Moreno, Colombia
Varietal - Caturra
Process - Washed
Flavour Notes - melon, red berries and caramel

Post Brew Aroma's - sweet, fruity and slightly floral

With a light mouthfeel, it was definitely an easy sipping kind of coffee. Smooth and next to no bitterness, with definite fruity notes, and dark/sour berry undertones.
As it cooled, it became more tangy and sharp with an underlying bitterness and really mellow fruity notes





Next up a Brazilian





Region - Berrador, Brazil
Varietal - Mundo Novo
Process - Natural
Flavour Notes - chocolate, berries and caramel

Post Brew Aroma's - Earth with dark tones

A really chocolatey brew, with tangy berry undertones, and lots of hints an fruits.
With a fruity sharpness and sour berry tones when it cools. 







Last but not least is a juicy Guatemalan





Region - Finca Palacious, Guatemala
Varietal - Caturra and Bourbon
Process - Washed
Flavour Notes- dried fruit, toffee and caramel

I love me a good Guatemalan, as everyone knows if you've been reading for a while. 

Post Brew Aroma's - very syrup-y 

Super light and fruity with underlying acidity but definitely a smooth cup. When it cools, it definitely had more dark toffee notes with more acidity, really tasty. 








I'm hoping 2019 is bringing everyone good coffee so far, I know it definitely is for me.
I'm also trying to up my review game, so the way I do blog reviews might slightly change in the coming months, so I hope they get better instead of worse.

Latte Art Lookback 2018

It has somehow come to that time of the year again, where we look back at the year, and one of my favourite blog posts I wrote last year, was my Latte Art Lookback, and since it was one of my most popular blog posts in 2017, I thought I'd do a 2018 version.


This year has been completely different, I have worked at a total of 4 cafes, worked at an event, and have had a few life breaks (you'll see the obvious gaps) 
But without further or do, here is everything I have poured in 2018.


January 

The beginning of the year I was still working at Coffee Lab, but I did have a few life things going on, so I went down to part time, as I was no longer living in Southampton it became a massive commute to get to Winchester.

February 

February was the month that I left Coffee Lab, I didn't have another job lined up, but I knew it was the right decision to do. I needed to move on with my life, and I honestly made life long friends working there, I learnt more than I could ever imagine, and I can't thank them enough for that.

March 

Also another gap, I spent most of March, looking for jobs, waiting for job interviews, even looking outside of the coffee industry, and it was definitely a low (but definitely not the lowest) of 2018. 



April

In April I started working at a chain company called Second Cup, although I really didn't fancy working for a chain again, I knew I had no other choice, I needed a job, I needed money, and no where else was hiring / would ever reply to my job applications !!!

April was also the month of London Coffee Festival 
(I will be going more indepth on another blog post coming out soon about all the best bits of 2018, so look out for that)
I managed to do a cheeky little pheonix pour whilst I was there which actually was the best pour I'd done in months.

May 

May was a really weird month, I got fired from second cup (more on that in a different post) I got really sick, I was in hospital a few times, I got a boyfriend (woo!) It was my birthday, and I found a new job (just a warning things go VERY DOWNHILL) 

In may I started working for a company called Coffee And Drift, which I thought was a perfect job. A brand new cafe, me as head barista. It was a dream. HA nope. 

One of the reasons it went downhill so quickly was I was waiting for this cafe to open until AUGUST, it was meant to open at the end of May, that's fine I had a bit of money put away I could survive, but no muggings me WAITED until August. Should of been a warning that it wasn't going to end well.


Anyway, back to latte art because I could literally rant for a thousand pages. 

We did some Instagram shoots for the new Instagram, which had my art on.

(I also lost a lot of the photos that were on the Instagram, as I got blocked from their Instagram (petty-ness level 100) so I asked them to take down every photo with my art, but I didn't actually have the photo's on my phone, so there would be a lot more... but)

So, this is the part where I got fired from Coffee and Drift, or as they put it "failed my probation period" I'm not going to get into the details as to why, but I was pretty low, I have never been so stressed in a job like I was at Coffee and Drift, and it was definitely a completely different atmosphere than I have ever experienced in a coffee shop before. 

I was again, unemployed. 

On a whim, I messaged a coffee shop that I used to love to visit, I knew it had just been put under new ownership and that they were hiring, so I slid into their Instagram DM's (classy and how 2018 of me) and I got the job as head barista. 

This was Lemana Coffee and Kitchen, my absolute dream, head barista and coffee connoisseur of the store, and my 2018 really started to get good.
